Instructions
  1. Boil the cauliflower for 5-10 minutes or until just tender (NOT mushy!!).
  2. Strain well and cool until there is no more steam coming off it.
  3. Blitz the cauliflower florets in a food processor or blender until they resemble breadcrumbs.
  4. In a large bowl, whisk together the eggs, garlic and onion powders. Stir in the cauliflower “crumbs” and mix well to thoroughly combine.
  5. Shape teaspoonfuls into balls and place on a lined baking tray. (I use a mini icecream scoop as it’s much quicker)
  6. Bake in a preheated oven at 200oC for 20 minutes, or until golden brown.
