Satay Chicken Burgers

chicken thigh fillets

gluten-free bread rolls
I use Orgran bread mix

cucumbers
thinly sliced
2
tomatoes
thinly sliced
1
capsicum (pepper) – any colour
thinly sliced
2
cups
fresh spinach
1
batch
satay sauce

Grill or bbq chicken over medium heat until cooked through (approximately 15-20 minutes depending on their size).
Slice bread rolls in half and toast if desired.
Smear satay sauce on rolls.
Stack salad and a chicken thigh on each roll.
