Ingredients
- 500 g minute steak
- 1 bunch fresh asparagus
- 2 Tbsp olive oil
- 2 large onions sliced
- 2 cloves garlic chopped
- 2 Tbsp balsamic vinegar
- 1/2 cup stock (broth)

Instructions
- Place the oil and onions in a fry pan and gently cook over low heat for about 15-20 minutes until the onions have softened and caramelise.
- While the onions are cooking, flatten the steak until it is about 2mm thin and place a piece of asparagus along it lengthways.

- Roll up the steak tightly to enclose the asparagus and tie off with string.

- Cover and set aside in the fridge until ready to cook.
- Once the onions have caramelised, add the garlic and cook for a further 1 minute.
- Push the onion and garlic mixture to the side of the pan and turn up the heat.
- Add the beef roll ups and cook for 1 minute on each side.
- Add the balsamic vinegar and stock and simmer for a further 1-2 minutes until the beef is well coated and glazed.
