Instructions
  1. Place the oil and onions in a fry pan and gently cook over low heat for about 15-20 minutes until the onions have softened and caramelise.
  2. While the onions are cooking, flatten the steak until it is about 2mm thin and place a piece of asparagus along it lengthways.
  3. Roll up the steak tightly to enclose the asparagus and tie off with string.
  4. Cover and set aside in the fridge until ready to cook.
  5. Once the onions have caramelised, add the garlic and cook for a further 1 minute.
  6. Push the onion and garlic mixture to the side of the pan and turn up the heat.
  7. Add the beef roll ups and cook for 1 minute on each side.
  8. Add the balsamic vinegar and stock and simmer for a further 1-2 minutes until the beef is well coated and glazed.
