Ingredients
- 500 g chicken thigh fillets cut into bite sized pieces
- 1/4 cup Besan (chick pea flour) (chickpea/garbanzo bean flour) or your favourite gluten-free flour
- olive oil spray

Instructions
- Dust chicken pieces in besan.
- Place on a baking paper lined tray (or just grease a tray, but it's less washing up if you use baking paper) and spray generously with the olive oil spray.
- Bake in a pre-heated oven at 200oC / 390oF for 20-25 minutes or until cooked through.

I usually make a double batch of these and freeze the extras for school lunches.
