Ingredients
- 2 Carrots large, spiralised (or cut into strips with a vegetable peeler)
- 1 red capsicum (pepper) thinly sliced
- 1 cucumber thinly sliced
- 2 large handfuls snowpeas (mange-touts) thinly sliced on the diagonal
- 1 red onion thinly sliced
- 2 cups rocket (arugula) (arugula)
- 2 green onions (eschallots, shallots) thinly sliced
- 2 Tbsp extra virgin olive oil
- 2 tsp red wine vinegar
