Herby Roast Vegetables

  1. Toss all ingredients together to coat vegetables evenly.
  2. Lay out in a single layer on an oven tray.
  3. Bake for 30 minutes at 200oC / 390oF, or until the vegetables are almost cooked through.
  4. Add beans, increase temperature to 220oC / 430oF and cook for a further 10 minutes until carrots and potatoes are tender.
