Instructions
  1. Cook onion and zucchini in oil until onion is soft.
  2. Add garlic, cook 30 seconds until the garlic is golden.
  3. Add tomatoes, tomato paste, oregano, spinach and salt.
  4. Bring to the boil, add mussels and stir well to coat.
  5. Cover with a tight fitting lid and cook for 6 minutes. Keep the lid on the whole time. No peeking or steam will escape and drop the temperature.
  6. Stir well.
  7. Discard any unopened shells.
  8. Garnish with green onions & parsley

You can easily substitute fish, or even chicken in this recipe if you don't like mussels.
