Ingredients
- 1 onion chopped
- 1 zucchini (courgette) diced
- 1 Tbsp Olive oil
- 6 cloves garlic crushed
- 3 400 g tins Tomatoes
- 2 tsp tomato paste
- 1 Tbsp Dried oregano
- 4 cubes Frozen spinach
- 1/2 tsp sea salt
- 1 kg mussels cleaned
- 2 green onions sliced
- 2 Tbsp Parsley chopped

Instructions
- Cook onion and zucchini in oil until onion is soft.
- Add garlic, cook 30 seconds until the garlic is golden.
- Add tomatoes, tomato paste, oregano, spinach and salt.
- Bring to the boil, add mussels and stir well to coat.
- Cover with a tight fitting lid and cook for 6 minutes. Keep the lid on the whole time. No peeking or steam will escape and drop the temperature.
- Stir well.
- Discard any unopened shells.
- Garnish with green onions & parsley
Recipe Notes
You can easily substitute fish, or even chicken in this recipe if you don't like mussels.
