Ingredients
- 1 onion sliced
- 2 tsp olive oil
- 500 g baby (chat, new) potatoes
- 2 cloves garlic thinly sliced
- 250 ml chicken stock (bone broth)
- 1 tsp sesame oil
- 1 Tbsp coconut aminos
- 1/2 tsp fish sauce

Instructions
- Soften the onion in the oil.
- Add potatoes and garlic.
- Toss to coat well in onion mixture.
- Add stock, sesame oil, aminos and fish sauce.
- Bring to the boil then cover and reduce heat to low.
- Simmer until tender, approximately 30 minutes.
Recipe Notes
If you have any leftover, you can make a potato salad with them, or slice them up and fry them for thick-cut chips.
