Prepare Beans
  1. Fry brown onion and garlic in oil until soft.
  2. Add kidney beans, tinned tomatoes, sweet & smoked paprika, cumin, oregano and salt.
  3. Simmer for 10 minutes.
  4. Blitz with a stick blender, food processor or blender until smooth.
Prepare Nachos
  1. Cool beans for 10 minutes (so they don't wilt the veg-etables).
  2. Spread bean mix in a flan dish.
  3. Top with vegetables and drizzle with lime juice.
  4. Serve with corn chips.
