Ingredients
Meat
- 2 tsp olive oil
- 500 g beef mince
- 2 Tbsp taco seasoning
- 1/2 cup water
- 1 400 g tin kidney beans
- 1/4 tsp sea salt
Toppings
- 2 tomatoes diced
- 1 lettuce shredded
- 1 red onion finely diced
- 1 avocado diced
- 1 capsicum (pepper) - any colour diced
- 3 button mushrooms slided
- 1/2 bunch fresh coriander (cilantro)
- 2 fresh red chillies finely sliced (optional)
- 1 large packet corn chips

Meat
- Brown the mince in the oil over a medium to high heat, stirring constantly with a fork to break up any lumps.
- Add the seasoning and salt, and mix well.
- Add the water and beans and bring to the boil.
- Reduce heat and simmer for 15-20 minutes, or until most of the liquid has evaporated.
To Serve
- Serve meat garnished with toppings of choice
- I like to set out all the toppings on a tray and let everyone help themselves.
