Ingredients
- 4 chicken thigh fillets large
- 4 gluten-free bread rolls I use Orgran bread mix
- 2 cucumbers thinly sliced
- 2 tomatoes thinly sliced
- 1 capsicum (pepper) - any colour thinly sliced
- 2 cups fresh spinach
- 1 batch satay sauce see recipe

Instructions
- Grill or bbq chicken over medium heat until cooked through (approximately 15-20 minutes depending on their size).
- Slice bread rolls in half and toast if desired.
- Smear satay sauce on rolls.
- Stack salad and a chicken thigh on each roll.

I can't buy gluten-free rolls where we live, so I use Orgran brand bread mix to make a loaf, Instead of putting the batter into a loaf pan to make a loaf of bread, I spread it into a lined baking dish so that it is only about 2-3cm deep (before rising) and bake it this way. Once it is cooked, I cut it into 6-8 squares and use each square as a roll. This works really well.
I just used GF bread and toasted it. As an ex-vegetarian learning to cook meat, I know it says ‘grill’ but I had to google what that actually required of me lol.
That’s a great idea to use slices of gluten-free bread!
