Instructions
  1. Grill or bbq chicken over medium heat until cooked through (approximately 15-20 minutes depending on their size).
  2. Slice bread rolls in half and toast if desired.
  3. Smear satay sauce on rolls.
  4. Stack salad and a chicken thigh on each roll.

I can't buy gluten-free rolls where we live, so I use Orgran brand bread mix to make a loaf, Instead of putting the batter into a loaf pan to make a loaf of bread, I spread it into a lined baking dish so that it is only about 2-3cm deep (before rising) and bake it this way. Once it is cooked, I cut it into 6-8 squares and use each square as a roll. This works really well.
