Instructions
  1. Boil the sweet potato until just tender.
  2. Drain well.
  3. Toss in olive oil and spread them in a single layer on a lined baking tray.
  4. Bake in a pre-heated oven for 25 minutes at 220oC or until golden brown and crispy on the outside.
