Ingredients
- 1 Tbsp olive oil
- 500 g beef steak thinly sliced
- 3 Tbsp taco seasoning
- 180 ml water
- 1 green onion (eschallot, shallot) large, thinly sliced
- 1 capsicum (pepper) - any colour thinly sliced
- 1 zucchini (courgette) thinly sliced
- 2 cups button mushrooms thinly sliced
- 1 avocado roughly chopped
- 1/2 bunch fresh coriander (cilantro) roughly chopped
- 2 green onions (eschallots, shallots) thinly sliced

Instructions
- Fry the sliced steak in the oil over medium-high heat until almost cooked.
- Add the taco seasoning and water, stir to coat thoroughly and bring to a simmer.
- Add the onion, capsicum, zucchini and mushrooms and cook for 2 minutes until the vegetables are heated through.
- Serve with tortillas, avocado, coriander and shallots.
