Ingredients
- 4 potatoes cubed
- 4 Carrots cubed
- 2 tsp extra virgin olive oil
- 1/2 tsp garlic powder
- 1 tsp mixed dried herbs eg oregano, thyme, rosemary
- 1 cup green beans cut into thirds

Instructions
- Toss all ingredients together to coat vegetables evenly.
- Lay out in a single layer on an oven tray.
- Bake for 30 minutes at 200oC / 390oF, or until the vegetables are almost cooked through.
- Add beans, increase temperature to 220oC / 430oF and cook for a further 10 minutes until carrots and potatoes are tender.
