Ingredients
- 2 Tbsp olive oil
- 1 onion grated
- 2 Carrots medium, grated
- 4 cloves garlic finely grated
- 2 Tbsp dried oregano
- 1 Tbsp dried parsley or 1/4 cup fresh
- 2 bay leaves
- 2 tsp sweet paprika
- 1 pinch sea salt
- 1 pinch pepper
- 1/2 tsp Honey
- 2 Tbsp tomato paste
- 2 410 g tins crushed tomatoes
- 1 tin water use one of the tomato tins to measure

Instructions
- Sweat the onion, carrots and garlic in the oil over medium heat for 5 minutes until lightly browned.
- Add the remaining ingredients and bring to a simmer.
- Simmer over low heat for an hour.
