Instructions
  1. Bring the water to a rolling boil in a heavy based pot.
  2. Add the rice and stir well (to prevent it clumping or sticking to the bottom) until the water comes back to the boil.
  3. Immediately cover with a tight fitting lid and turn the heat down as low as you can.
  4. Cook for 15 minutes WITHOUT REMOVING THE LID. No sticky beaking!
  5. Remove from heat and carefully remove the lid (be careful as there will be a LOT of steam!!!)
  6. Fluff the rice with a fork or spatula and place a clean tea towl over the top of the pot, then put the lid back on top over the tea towel. The tea towel is to catch the condensation and stop it falling back into the rice.
  7. Let the rice sit (off the heat) for 15 minutes to finish steaming. Make sure it isn't anywhere near the stove so that the tea towel doesn't catch fire.
  8. After it has finished standing, fluff the rice again before serving.
