Ingredients
- 1 cup quinoa rinsed well and drained
- 3 cups fresh parsley firmly packed, roughly chopped
- 2 Tbsp fresh mint finely chopped
- 1 Tbsp fresh lemon verbena leaves (or lemon zest) optional - finely chopped
- 3 green onions finely sliced
- 2 tomatoes diced
- 1 cucumber seeds removed and diced
- 1 lemon juiced and zested
- 1/4 cup olive oil

Instructions
- Bring 2 cups of water to the boil in a pot and add the quinoa.
- Place a lid on the pot, reduce heat and simmer gently for 15 minutes.
- Remove from heat, fluff the quinoa with a fork, and sit for another 10 minutes.
- Cool to room temperature.
- Combine cooled quinoa and remaining ingredients in a bowl and toss to combine thoroughly.
