Ingredients
- 1/4 cup olive oil
- 1/2 lemon juice & zest
- 1/4 tsp pepper
- 1/2 tsp dried oregano
- 1/2 tsp garam masala
- 1/2 tsp ground cumin
- 1/2 tsp sea salt
- 1 clove garlic crushed
- 1 red onion thinly sliced
- 1 capsicum (pepper) - any colour thinly sliced
- 1 410g tin butter beans rinsed and drained
- 1 cucumber diced
- 450 g sweet potatoes baked and cubed

Instructions
- Whisk together oil, lemon juice, garlic, herbs and spices.
- Add vegetables and toss to coat.
Recipe Notes
This makes a nice side dish, but is also nice on its own for lunch.
